Brie-Stuffed Burgers and Garlicky Leeks

If you are doing some grilling this summer and are looking to spice up your burger game, these brie burgers are delicious. Gooey brie cheese and a super flavorful garlic-leek spread – a slightly more refined version of the traditional burger!

For those that prefer a thinner burger, skip stuffing the burgers and simply cook the slice of brie on top of the burgers. And if you live in an apartment like we do, cook the burgers to your liking in a hot pan.


Brie-Stuffed Burgers on a bed of Garlicky Leeks


Servings: 4

Prep time: 20 minutes

Cooking time: About 10 minutes

2 pounds (a little less than 1 kilo) good ground beef

Salt and black pepper

4 oz (120 g) Brie or Camembert cheese, cut into 4 slices

1 large leek (or 4 scallions if you don’t have leeks), white and light green parts, thinly sliced

2 garlic cloves, minced

½ teaspoon grated lemon zest

¼ teaspoon cayenne pepper

2 tablespoons olive oil

½ teaspoon salt

¼ cup (60 g) mayonnaise

4 hamburger buns

Lettuce and tomato slices

In a bowl, season the ground beef with salt and pepper and mix with your hands to combine.

Make the garlic-leek spread. In a small bowl, combine the sliced leeks, garlic, lemon zest, cayenne pepper, olive oil and salt. Heat the mixture in a small pan on medium-high heat and sauté for 2-3 minutes until the leeks are softened. Put the mixture back in the small bowl and let cool.

Divide the meat into 8 even patties. Top 4 of the patties with a tablespoon of the garlic-leek spread and a slice of Brie. Place the remaining 4 patties on top and pinch the edges of the patties together to seal.

Cook the burgers to your liking on the grill over high heat (about 8 minutes for medium-rare).

Meanwhile, mix the mayonnaise with the remaining garlic-leek spread. Toast the buns and spread the mayonnaise mixture on the four buns, top with the burgers and serve with lettuce and tomato and why not with a side of these onion rings!
