This is definitely my easiest dip recipe, but also one of our friends’ favorites. I usually have all the ingredients on hand so I can whip up this appetizer for unexpected guests or if we need a snack before dinner. It’s light and creamy and perfect with crudité (carrots, cucumbers, radishes, yum!), but also with crackers or pita chips. Make up to a day ahead and simply stir before serving.
Creamy Tuna Dip
Servings: 4
Prep Time: 10 minutes
1 can (170-180g net/6-oz) tuna in water
2 tablespoons crème fraiche, Greek yogurt or sour cream (low fat is fine)
2/3 cup or 5 1/3-oz (150 g) low fat cream cheese, softened
1 tablespoon fresh lemon juice
1 tablespoon chopped chives plus more for serving
1 tablespoon minced shallot (optional)
Dash of salt and pepper
Drain the can of tuna, pressing down to get out all the liquid. Using a fork, flake the tuna into a small serving bowl. Add the crème fraiche (or sour cream or Greek yogurt), cream cheese, lemon juice, chives, salt and pepper. You may also add a tablespoon of minced shallot. Mix together with a spoon until you get a creamy consistency. Taste for seasoning and add a little more salt or lemon juice if needed. Refrigerate until ready to serve. Snip some chives on top and serve with crudité, crackers, pita chips, etc.
