The times in these recipes are approximates depending on how quickly or slowly you chop/measure, etc. Growing up, my mom chopped very quickly, but things were always stressful right before dinner guests were expected to arrive.
And I know that stress can lead to accidents. Therefore, I chop and dice pretty slowly. I can go faster when I want to, but my mind always tells me to slow down. I did slip up once – let’s just say my finger was mistaken for a hunk of chocolate while I was trying to make chocolate chips for my Chocolate Chip Banana Bread . . . ouch!
So prep time will depend on your speed. But, I suggest giving yourself enough time to not stress and to actually enjoy cooking. If you have guests coming over, make a dish like Vegetarian Lasagna that can just be popped in the oven before serving or try to do as much prep work ahead of time so you don’t need to scramble at the last minute. Please keep your fingers intact.
And while I know cooking goes great with a nice glass of wine, maybe wait to pour the second one until all your chopping is done : )
